In Defense of Onions
One of my coping mechanisms while staying at home is preparing food for friends. Our hardworking neighbor consented to a meal, but when questioned about dietary preferences and sensitivities said, "I don't like onions." Excuse me?! The majority of our recipes include onions. It was as if he'd insulted a faithful friend. Are you like that about your trusted raw ingredients? Do you appreciate them and believe others should, too?

Onion appreciation is something Bill Thomas and I share. His next recipe is his mother's Onion Pie. Bill said, "This is an excellent side dish and compliments pork."
ONION PIE
Brown 1 lb. of sliced Onions in 3 Tbsp. Butter.
Add 3/4 cup Half and Half.
2 tsp. Vinegar
1 Egg, well-beaten
Pour filling into Pie Crust. Bake in a 400-degree oven for 20 minutes until golden brown.
Bill added, "Her recipe actually says 'Top milk' from the time milk was not homogenized and cream was at the top of the bottle. Another early memory, our local dairy's motto was, 'You can whip our cream, but you can't beat our milk.' Milk delivery was by horse and wagon. The early 1930s."
